How do I stop my new series SE watch from going dark when I turn my wrist?

On the Watch app on your iPhone, go to My Watch > Display & Brightness > Always On and be certain it's "One".
This assumes you have a third generation Apple Watch SE. The earlier generations do not offer this capability.

Thanks, it’s much better now. It’s dark when my wrist is down but pops up bright when I raise my wrist now. Just wish it wouldn’t go dark at all during the day. Very annoying.
Check all the rows under "Always On".
