Is there a way for a student user to generate a complete list of assignments (missing) for ALL courses they are enrolled in? Right now they can do that by going course by course but it would be awesome if they could generate a master list somehow.
Not within Canvas itself. If you use the Chrome Web Browser, you can add an extension like Canvas Tasks. This will show you course completion and assignments for all courses on your dashboard.

It would be very beneficial for observers (parents) if they could view instructor comments. If they had access to this information, they could better understand the grading of individual assignments and better understand the errors that their student made.
